Two new stars in the Michelin Guide!
Just nine months after opening, the restaurant Les Ambassadeurs by Christophe Cussac shines with two Michelin stars. Executive Chef, Christophe Cussac, invites you to live a unique and convivial culinary experience. This warm setting, designed by Jacques Garcia, is the promise of a moment of sharing, where guests will be invited to rediscover simple, contemporary and authentic Mediterranean cuisine.
In the 1920s, the hotel opened the restaurant « Les Ambassadeurs », which became an emblematic address for French gastronomy with a Monegasque and international clientele.
« Les Ambassadeurs by Christophe Cussac » is a tribute to this place, offering a gourmet contemporary Mediterranean cuisine.

Witnessing every movement of the Chef and his team, The Chef’s Table offers you a great view of their culinary skills to create sublime dishes for you. A bread and dessert trolley are amongst the highlights that delight guests with a selection of goods to be savoured.
A choreographed service that comes to life, like a theatre stage, where everything is personalised and played out in several acts. Courtesy, warmth and multiple attentions punctuate the gastronomic experience, ensuring that each guest feels pampered and enjoys a moment out of time.

The « Fines Bouchées » tasting, made up of 13 perfectly-sized dishes, offers the freedom to create your owntailor-made experience. A desire to be able to taste everything.
The new restaurant is returning into its century with a desire for openness and transparency.
« Les Ambassadeurs by Christophe Cussac » will restore a new atmosphere for gastronomes to enjoy, closer to the hard working team.
It will also be possible to get closer, at the chef’s table, or in the kitchen area, to discover the world of patisserie and bakery. Their creations are highlighted during rituals that punctuate the service with the stunning appearance of the bread and dessert trolleys to the great delight of the hosts.

Exceptional vintages
At the restaurant Les Ambassadeurs by Christophe Cussac, the team of sommeliers proposes a high-flying wine-list.
Along with his team, Frédéric Woelfflé, Head Sommelier, has concocted a remarkable wine-list with the utmost care. France’s finest wine-producing regions are represented, you can also travel the world thanks to the sommeliers’ astute suggestions.
Fans of mellow wines and magnums are not forgotten and, in the case of Champagne, priority is given to vintages from small producers while including “les grandes maisons“.
In particular, connoisseurs will appreciate offerings such as “P3” Dom Pérignon of 1992, a selection of great dates for Veuve Clicquot “La Grande Dame” in rosé or white, rosé millesimes “Cristal” and white “Vignoble de la Montagne” millesimes signed Roederer or, among many more, a 2008 vintage, “Vieilles Vignes Françaises, Blanc de Noirs“, by Bollinger.
One thing is sure, with this exceptional collection proposing 15,000 bottles, 1,300 references including 180 champagnes, you will have to return more than once to explore the endless possibilities for wine and food pairings.
