Sushi Festival at YOSHI

YOSHI, Joel Robuchon’s first Japanese restaurant worldwide, which was recognized by the Michelin Guide in March 2010, hosted the team from Sushi Saito for three days as part of a Sushi Festival. Sushi Saito is a Japanese restaurant located in the Minato district of Tokyo which, with a capacity of only seven covers, is the smallest restaurant to receive three accolades from the famous gastronomic guide.

During three consecutive days, from July 15 to 17, the sushi master trained by the great Sushi Master Takashi Saito offered for the first time anywhere except their own restaurant, a selection of sushi to the YOSHI restaurant guests.  

Takashi Saito is one of the four Sushi Masters in the world who hold three Michelin stars. He is renowned for his incredibly delicate sushi, which are made from the best ingredients and require extremely meticulous preparation. The Sushi Master pays particular attention to the balance between the rice, which he prepares in red vinegar, the fish, the wasabi and the nikiri.

For the first time, the chef sushi master used Mediterranean products. The sushi were served exclusively at the bar of the YOSHI restaurant and individually so that they could be eaten just twenty seconds after the fish was placed on the rice. 

YOSHI’s Chef, Takeo Yamasaki, suggests several menu offers : A la Carte menu and Tasting menus starting from 120 euros per guest.
